Creamy salmon pasta with tomatoes, mustard and capers

Every so often when I come up with a recipe that I’m pleased with I feel the need to share….

Last night Ernie and I were both mildly grumpy and really didn’t feel like cooking. I think we both felt the need for lo mein (one of our favorite comfort foods). However we’re going to Maine next week and we really need to watch our money so I made Ernie a deal—–if he put the Owen to bed (poor sick Leo was already asleep) I would come up with dinner.

I dug some salmon out of the freezer—luckily it was some great wild salmon that we’d bought recently so it had lots of flavor. I sort of poached it quickly in the microwave. Oh—I forgot to mention that this meal was very high fat. Anyway—I had some half and half that I’d bought for some recipe I’d never made. So I cut a bunch of cherry tomatoes in half and threw them in a pan with some garlic and olive oil. Once they had softened I added the cream and then a couple of tablespoonfuls of dijon mustard and capers. I simmered until it thickened slightly and then added the salmon. I stirred it until the salmon broke into small pieces and then added some almost cooked pasta (I used spaghetti because that’s what we had but I’d probably choose linguine) and let it simmer for a few minutes. It looked great and tasted better.

Utterly amazing. The cream softened the sharpness of the mustard and the capers, the tomatoes lent a sweet note and some color and the salmon was perfect. A little parsley or some other herb would have looked good but I was too tired.

Now of course I need to come up with a lower fat version. Maybe if I used some fish stock or something and just a bit of cream to mellow it? hmmmm

  1. Mmm, that sounds absolutely delicious. My problem is that my beloved husband hates cream sauces. Don’t ask me how we ended up married. 🙂 He wouldn’t touch the corn chowder I made last week. Well — my friends at work benefitted!
