Soy Glazed Fish with Daikon and Peas

Those lucky people that have a full share from Sola Gratia Farms are getting their share tonight and I'm almost jealous because I've already used up my turnips, daikon and peas!

The other night we had some frozen mahi mahi (I tend to buy fish at the counter all the time but given that most of it is frozen previously we're trying to get in the habit of picking some up that is frozen so we have it on hand). I just used the marinade recipe from the back of the bag…it was pretty straightforward: about 1/4 cup soy sauce, a couple of tablespoons of honey, a few tablespoons of balsamic vinegar, a bit of oil, chopped garlic and ginger. We let the fish marinate about 20 minutes and then we just simply sauteed it. While we were doing that we brought the marinade to a boil and let it go until it started to thicken. Then we tossed it with chopped daikon and peas. We'd gone ahead and shelled the peas. We chopped the daikon and then simmered it until it was tender—just tossing the peas in for the last minute or two.

Absolutely LOVED the whole thing!
