Green Tomato Bread and Co-Pays

I woke up early this morning and couldn't sleep thinking about things I need to do at work and at home. I finally went downstairs and surprised Owen and Ernie. There was no milk because I didn't go to the store yesterday so I couldn't have my coffeemilk. Instead I drank ice water and watched CNN. Geesh…I don't know how Ernie does it. At least when I read things I can skim them or skip them…I felt chained to the political circling with nowhere to go. Blegh. 

Owen tried sniffing a lot and talking about how congested he was, then about his stomach hurting, but we just told him he was going to school. He was highly offended by our insinuation that he was trying to get out of it. God I love that boy. Leo's going back to school after being sick but he remembered that tomorrow is early dismissal and he's off Friday so he was happy. 

Off to the Cancer Center this afternoon and not particularly in the mood for it. It's funny how sometimes I don't care and sometimes I do. We now have co-pays on Ernie's infusions, which we hadn't had in the past. There goes any raise I got this year. Oh well…a piece of Green Tomato bread will soothe my soul no doubt. And I'll take my baby out for a drink after his infusion. It's a tradition…just like Ernie putting a jigsaw puzzle piece in for Karen Darr at one of the puzzles set up in the infusion suite. Traditions are good.

Green Tomato Bread

2 cups chopped green tomatoes
3 cups flour
2 cups sugar
1 cup vegetable oil
2 eggs
1/4 t baking powder
1 teaspoon baking soda
1 tablespoon cinnamon
1 teaspoon salt
1 teaspoon vanilla

Mix dry ingredients and set aside. Mix oil and eggs and stir in dry ingredients, add tomatoes and pour into two buttered and floured loaf pans. Bake at 350 degrees for 55-60 minutes.

  1. I tried the recipe and the dough looks more like cookie dough than bread dough. I certainly may have screwed up but before I try again, I just want to make sure. Is 3 cups of flour and 2 cups of sugar the right amount, or might there be more wet ingredients? Thanks!
