Another busy week, between getting over colds and getting ready for a house concert….so I am in late in posting my Sola Gratia recipe…..I really liked this one though so will slip it in under the wire….
The golden glow of the leaves falling in our yard was heavenly this weekend. I spent a good bit of yesterday afternoon enjoying sitting in the yard reading and periodically looking up to admire the clouds racing by and the leaves covering everything….
We had told Owen we'd make pizza so he was very excited. He and Ernie are in charge of making the dough and I get to prepare the ingredients. Owen went with a classic tomato sauce (and yes it was jarred…but man I love that Paul Newman's Sockarooni) and some sausage. Ernie and I went with sweet potato, red onion (from Sola Gratia), a bit of sausage and lots of kale from Sola Gratia. It was wonderful.
I sliced the sweet potatoes thinly and was going to sautee them in a pan but decided that would take too much oil so just added some water and simmered til they were soft. I sliced the red onion and sauteed it and browned the sausage. The kale I left raw and just roughly chopped. I had read two different ways of using kale on pizza—a lot of them put it on raw and let the high oven heat cook it…others cook it ahead. I liked the raw but I think next time I'll try cooking it briefly first. Owen rolled out our pizza and I put a bit of olive oil on, then the sweet potato slices, then some red onion and sausage before dropping several handfuls of kale and topping it with shredded mozzarella. Oh, and a few red pepper flakes on top of the kale just becaue. I had the oven nice and hot at 550 degrees and it took less than 10 minutes.
Owen liked his better but I loved the sweet potato and kale!
Oh, and I forgot to add that we used this pizza recipe. We used half of it last night for two pizzas and have the rest in the refrigerator waiting for another night….
