Rascal just named the post. I don't want to discourage his literary efforts so I went with it. What is UP with these cats sitting on the peninsula and keyboard all the time? This is new. As you can see, I remembered where I had another keyboard so I am back to, hopefully, a left shift key for caps, apostrophes, hyphens and more!

Lat night I made yet another, if not piss poor, than at least less than memorable eggplant parmesan. I love eggplant parmesan but it's not something I make but I love eggplant so I'd like to conquer it. My mother never cooked with eggplant and honest to God I discovered eggplant parmesan in the Allen Hall dining hall my freshman year…..later, when I started seeing the cute shaggy haired blonde guy from Record Service, he would take me to Dom's and I would always order eggplant parmesan….well, I suppose eggplant parmigiana, more correctly. 

I did a search here on my blog and I find a post stating that I made eggplant parmesan and it was great….but of course I have no idea what the recipe was. This version roasted the eggplant at high heat, rather than breading and frying, and there so much cheese that you just kind of tasted….cheese. Any recommendations are welcome. Or, other eggplant recipes for that matter….

I did make a beatiful side of some broccoli raabish broccoli shoots. Gorgeous…and from farmer Greg of course….

And on another note….Ernie felt good enough to sleep in our bed last night! YAYYYY! He's been in such pain that he's found it easiest to sleep on the couch as we can prop him up a little more easily there. He did pretty good last night though and I felt so much more whole with him by my side….

  1. Aww, love you too! Hang in there Ernie and I send prayers for your continued healing. I only attempt eggplant parm once…..fail! I will eat it tho! 🙂

  2. Oh man! You made eggplant *and* something raabish? I so want to cook with you someday. I’m sure the eggplant helped Ernie heal.

  3. Glad Ernie seems to be on the mend. I like to peel eggplant first- it seems the peel always imparts a bitter taste to me. Then we slice it up about 1/2 inch thick, dip in egg wash and then in panko crumbs mixed with grated parm and a little Italian seasoning or oregano. Roast at high-heat til crispy, no flipping required. Then we sauce them lightly, add cheese and bake for a few more minutes. Kind of an un-fried version I guess but if I can do it it’s fool-proof!

  4. I slice eggplant [skins and all] about 1/3 — 1/2 inch thick. I rub both sides with mayonnaise, dip one side in grated parmesan and place under the broiler till bubbly and browned. Flip the slices over and sprinkle more parmesan on that side and repeat the browning under the broiler.
    Then put slices in baking dish. Tuck fresh herbs under and around the slices. Pour some tomato sauce over the slices. Place slices of fresh mozzarella on top and bake in oven till browned and bubbly.

  5. Never thought about using mayonnaise but it sounds delish! Need to try it as dealing with the egg step can get messy.
