I have a bunch of posts all written in my head, so forgive me if I post too often. My beloved lap top is no more, and for awhile the only keyboard we had for the iMac didn't have a space bar that worked (thank you very much for eating all your ramen at the computer Owen). I know have an ersatz, temporary keyboard so here I am.
A week ago last Sunday, Heather offered me some tomatoes that she'd been gifted with. We had JUST been talking about the fact that sometimes we take all this time to dry tomatoes or make sauce, and then never use it. This did not daunt me however. Ernie brought the box in from her car. She shook her head and said, "He took the WHOLE box." I protested, saying this would be good for me, give me a project.
A week later, I stared at the damn box of tomatoes that were starting to go bad, and figured I'd better use the damn things. I cut off any bad spots and just threw them cut down on a baking sheet that had been coated with olive oil, and sprinkled with dry basil, oregano, and marjoram, as well as salt and pepper. Oh damn…I should have added fennel seed! Oh well. We cooked them at 375 until they were beautifully roasted, and then threw them in the food processor. SO damn good. Obviously, if I didn't have FODMAP issues, I would have added onion and garlic. I was worried how it would be without it, but it's really lovely.
Of course the best part is nibbling the pieces of tomatoes before I threw them in the food processor.
Now I just have to remember to USE the sauce.
