I had some ground bison, which I really love, and couldn't decide what to do with it. I decided I hadn't had an Indian-ish curry in awhile, so that's what I did. I browned the bison and threw in a bunch of spices….some Penzey's sweet curry, cayanne, coriandor, cumin, cinnamon, and ginger. Then I tossed in chopped sweet potato, kohlrabi, and broccoli. I poured in some freshly made coconut milk. I covered that and simmered (oh, salt and pepper too) until the vegetables were just done. Then I added in some frozen peas and a few handfuls of spinach. It was wonderful….rich and warm and spicy. It's not the most beautiful, but it was damned good.
