1. Yesterday we got up, did a bit around the house and then headed to Carle. Ernie had two doctors appointments. In between, we went and got some iced tea; over to Epstein's Bagels as it was just a block or so down the road. We chatted a bit and then he crossworded while I poked around on my laptop. We sipped our tea and enjoyed the scents of the bagels and coffees. All I could think was how much I enjoy just being with him — not talking, not needing to. It amazes me how much pleasure there can be in those times. I don't often toss the 'blessed' word around, but I did several times yesterday.
2. I finally seemed to conquer the curried rice salad. I based it on this recipe…just adapted a bit. The other recipes I used called for cooking the rice WITH the curry powder. It ended up with that musty flavor that too much turmeric can bring. This one used just as much curry powder, but only in the dressing. Interesting. At least to me! No garlic or onion because of my stuff, but I'm sure it would be good with it.
Cynthia's At LAST Curried Rice Salad
2 cups raw long-grain rice, cooked and cooled
Grated purple cabbage
Diced yellow and red bell pepper
Chopped bunch of green onions
Frozen green peas
1 cup coconut milk
1-2 teaspoons curry powder (Penzey's Sweet Curry Powder is my favorite)
1 tablespoon apple cider vinegar
dash of red pepper flakes
salt and pepper to taste
I whizzed together the coconut milk, curry powder, vinegar, red pepper flakes, salt, and pepper and poured over the mixed rice and vegetables. You could use less coconut milk, but I was making it a day ahead and didn't want it to dry out. A bowl of this made for a delightful breakfast this morning. Not the most beautiful, but I was pleased with it.
3. Sometimes, we're pretty damn relaxed about clean up. Besides, Rascal might want to snack on the last of the popcorn.
4. I like watching Owen help Ernie set up.
