1. Sometimes the best moment on house concert day is the soundcheck. The adrenalin. The sound. The promise. It feels so good.
2. Cooking. Jalapenos and colored small bell peppers.
3. David's beard. I mean, really. Of course, the man grows a beard like this. No everyday beard for this guy. As Cyndi Holcombe said on FB just now, "just full out prophet, no regrets." Yup.
4. WHEN will I remember that recipes generally use Diamond kosher salt so I need to adjust quantities when I use Morton kosher salt? Sigh. Sorry about the salty pork, all.
On the other hand, the Nishiki rice with the ginger-scallion sauce turned out nicely. A few requests for the recipe. It's super simple and no, I'm not sure if I followed it exactly, but it's a can't miss kind of thing.
GINGER-SCALLION SAUCE:
- 2 ½ cups thinly sliced scallions, both green and white parts
- ½ cup peeled, minced fresh ginger
- ¼ cup neutral oil (like grapeseed) [I used vegetable oil]
- 1 ½ teaspoons light soy sauce [I used regular soy sauce]
- 1 scant teaspoon sherry vinegar [I'm sure you could use another type of vinegar, or lemon or lime juice as well]
- ½ teaspoon kosher salt, or to taste
I did the ginger in the blender, didn't even bother peeling it, and then threw it all into the food processor. Had some leftover rice this morning, with a bit of the celery salad and it was delightful.
5. Poor Cyril is under the weather…something to do with a spark plug…so the morning did not go smoothly. HOWEVER, I now have my favorite first day of school pic ever (after the one where Leo is hiding in the arbor, of course).
