Guys, I made the BEST DAMNED dinner last night. I know it doesn't sound sexy or even look sexy, but it was!!
Cynthia's Butternut Squash Quinoa
1 cup of quinoa uncooked (cook according to directions)
half a butternut squash, peeled, cut into bitesize pieces
half a container of baby kale and other greens
1 kohlrabi, peeled and diced
a handful or two of dried cranberries
handful of walnuts, toasted
one bunch of green onions, sliced (I just used the green part because…low fodmap)
I roasted the squash in a bit of olive oil until done. Next time I would do it at a higher heat, say 500, so it would get a bit more carmelized. The greens I just chopped up roughly and mixed with the warm quinoa and squash so they wilted just a bit. I left the kohlrabi raw and I think the crunch of that, along with the walnuts, was perfect. I just mixed everything together and dressed it with a bit of olive oil, salt and pepper. It was crazy good and also gluten free, and well, hell, it was even vegan!
I hope it's as good next time I make it…which might be for the Peter Holsapple Combo house show!
