Man, I got nothing to write about but it feels funny if I don't. I've got cats, eating, and how depressing it was at the cancer center yesterday, so I'm going with cats and food.

I've done some lousy cooking of late, but last night's dinner was delightful. Owen ran to the store for cat food and cat litter and got me some salmon and salad greens while he was there. I simply threw the salmon in a low cast iron skillet with a bit fo olive oi and cooked it until the skin was crispy. I turned it over for a few minutes and that was it. I felt like it needed something else so I made a little pesto/gremolata kinda thingy. I had some nice kale raab so I threw that in the food processor with some lemon zest, black olives, olive oil and salt. I put that on top of the salmon and served with simple salad greens. The pieces were huge but we both ate it all instead of leaving some as we planned. It was SO good. Even Ernie ate every bite!

This morning I had the rest of my pesto thingy mixed with my scrambled eggs. Ernie seemed doubtful but I loved it.

  1. That is a lot like my dogs, Amber, Riley and Jack. My fur babies. Threat, run around in the yard and napping…repeat. They are too sweet. Bob looks like a real sweetie. Onward!
