Last night’s dinner. Boneless skinless chicken thighs, rubbed with smoked paprika, salt, pepper and a bit of olive and grilled. Plus tomato and basil and corn on the cob cooked in the microwave because it’s so damn easy. Simple and delicious. Long reign Smoked Paprika!
The light on this was screwed up but it amused me. Sandwich drama. I love you iPhone. Gluten free bun with steak seared in a cast iron skillet because it was raining, sliced and piled on the bun with a slab of tomato, mayo and the perfect amount of salt and pepper. And yes, in front of the tv.
Ok, this isn’t food but he’s definitely on alert for it.
Ok, yes these pork tenderloins got a little dark, but damn they were good. Just seared in the cast iron skillet (more rain) with lots of fennel seed, cumin and if recall correctly, some more smoked paprika. Yes, I’m on a kick. The fennel seeds are what made it though.
Ok, now we’re getting ready to bring lunch to some friends. Took the leftover grilled chicken and mixed it with marinated grilled red and yellow peppers that we made last night. Marinade of olive oil, red wine vinegar, a bit of honey and a bunch of dried oregano because it was raining too hard to get the fresh.
Also on the lunch menu, simple salad of green beans, corn, cherry tomatoes and basil. The basil is fresh because my porch window boxes are FINALLY planted and full of herbs.

And yes, this is a lot of meat but the plan for tonight is quinoa fritters and a kale puree. We shall see.
