I hadn’t made these in ages and I forgot how good they are. I just mixed up tricolor quinoa (for some reason I like it better than plain….tastes a bit nuttier) with some ground salmon I had in the freezer, two eggs and a good healthy dash of Old Bay Seasoning. I dropped spoonfuls into a pan with some olive oil and let them get the tiniest bit crispy and served them over greens and cherry tomatoes. Delightful. Leftovers made a good breakfast today too. These last really well in the refrigerator too so I made a big batch.
That’s all today. No other news. It’s Monday but I don’t mind. Maybe I’ll even get my window boxes up this week. It’s not too late, right?
