Leo and Owen are on their way to O’Hare. Owen will drop him off and Leo will head on to London for the Pendulum show. I’ll feel better when he gets there and connects with all his friends, but yes, I’m going to worry like crazy.

Me? I’ve been under the weather a bit, most definitely yesterday and a bit today. Probably my body’s way of saying TOO MUCH STRESS. Who knows.

My favorite dinner item of late? My smoked paprika corn fritters. I love corn fritters, Ernie, not so much–but he loved these so there you go. I had two ears of leftover corn, one cooked, one raw and getting slightly on the older side. I cut the kernels off the cob, mixed in one egg, about half a teaspoon of baking powder and a couple of tablespoons of gluten free flour. Oh, and salt and pepper and maybe a half teaspoon or so of smoked paprika too. Later when we were ready to cook we weren’t that hungry so I put this in the refrigerator. So, last night when I sauteed them, the flavors had had the day to sit and get to know one another. They were the best ever. The smoked paprika was mild, just gave it a big of edge to the sweetness of the corn. I might actually add a dash of hot sauce or herbs next time. They actually stayed in one piece too. I think the extra time in the refrigerator is key.
