In my ongoing I-don’t-feel-like-cooking malaise (who am I? what happened to me?) I stared at the refrigerator trying to figure out what to do last night. We had some kielbasa, something I rarely buy, and various vegetables. I chopped up a couple of potatoes, tossed them with a bit of salt and pepper and olive oil and put them on sheet pan in a 400 degree oven. After ten minutes or so I took out the pan and dumped a bowlful of other things I had chopped up: kielbasa, cabbage (about 1/4 of a small cabbage), several poblano peppers and a red pepper. As with the potatoes I had tossed them with a bit of oil and seasoning. I put the sheet pan back in for about 20 minutes and presto…it was done. I made a thick mustard vinaigrette (a couple of tablespoons of Raye’s mustard along with about one tablespoon of olive oil and lemon balsamic vinegar) and drizzled a bit over everything. I do think the mustard vinaigrette really made it…definitely key! Oh, and of course a normal person would include onion with this but I’m back on the Low Fodmap high horse.

Today we did a day wander (pictures to follow) and find ourselves surprisingly tired. I took the leftovers from last night, chopped them a bit finer and made a frittata (just eggs and a bit of cream). I also threw in some shredded zucchini. I put the pan in the oven, again at 400 degrees, and this is what came out. Used a bit of mustard vinaigrette on top of it too!
